Cut pork loin into strips, about three inches long
Cut red pepper into strips and slice green onions
Cook pad thai noodles according to directions
Heat cast iron skillet on high for 5 minutes, then add oil. Add pork, chili garlic sauce, and ginger. Stir fry for 2-3 minutes
Add bell pepper and stir fry for additional 2-3 minutes
Mix in chicken broth, soy sauce and peanut butter and reduce heat to low
Cook until sauce thickens, about 1-2 minutes
Add green onions and combine
Server over noodles and garnish with a few more sliced green onions
