Ingredients
- 1 pound boneless chicken breast
- Tomato basil seasoning
- 1 medium red onion
- 3 cloves garlic
- 1 cup red wine
- 2 tablespoons butter
- 12 ounces sliced mushrooms
- ¾ cup sun dried tomatoes, diced
- 2 packages Knorr® Parma Rosa Pasta Sauce Mix
- 16 ounces penne pasta
- ½ cup freshly chopped basil
- ¾ cup freshly grated parmigiano-reggiano
Instructions
- Julienne the onion into long thin strips. Dice sun dried tomatoes. Set aside.
- Rub olive oil on chicken, season with tomato basil seasoning and rub in. Cook chicken on grill or sear in skillet until done. Set aside and, at the end, cut into 1 inch pieces just before you mix the other ingredients into the pasta.
- Heat stainless steel fry pan over medium heat. When hot, add 2 tablespoons olive oil. Let oil heat up. Add red onion and sauté for 1 minute, add garlic and half of the sun dried tomatoes and sauté until onion is tender. 5-7 minutes.
- Add red wine and deglaze the pan. Add butter. Let melt and mix with red wine. Add mushrooms, the rest of sun dried tomatoes and simmer, stirring frequently, until liquid reduces and nearly gone.
- Follow instructions and make Knorr® Parma Rosa Pasta Sauce.
- Cook pasta according to package instructions in water with teaspoon of salt. Drain pasta. Place pasta back in large pot. Add onion and mushroom mixture, chicken, basil, and parmigiano-reggiano. Add Parma Rosa Pasta Sauce. Mix well.
- Garnish with more parmigiano-reggiano.
